This week we go Chinese Islamic!

There’s a large population of Chinese Muslims in the Northern and Western sides of China, and their cuisine is some of my favorite styles. No Pork, of course, but lots of lamb and some excellent noodles and dumplings. My favorite noodle is the knife-cut style, where the chef literally grabs a ball of dough and slices it with a knife or a thin metal plate to create thick, chewy strands of noodles.

House special chicken. This is a famous dish from Henan province. first fried, then cooked in a pot with 8 spices an soup base. The meat is fragrant, firm and has a nice chewy consistency.

My favorite, knife sliced noodles. Here it’s stir fried with mooshu and chicken. Fantastic crunchy textures from the veggies and chewiness from the noodles. An excellent dish, one of my favorites.

Can’t go to a Chinese islamic place without some lamb! Here’s the sour cabbage lamb pot with glass noodles. The sour cabbage is fermented to preserve the vegetable and also takes away some of the gamey taste of the lamb.

One of the signature items served here is the green onion and sesame bread. So simple and yet so pleasing, crunchy on the outside, hot and soft on the inside, and so naturally fragrant with the green onions.

This place is great for large parties, order a pot, bread, a couple noodles and some extra lamb dishes or some dumplings, it’d be a very satisfying and economical meal.
